Zaatar Grilled Chicken with Sumac Yogurt Sauce

Ingredients

  • 4 boneless chicken breasts, about 1 pound each
  • 2 tablespoons zaatar
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup Greek yogurt
  • 1 tablespoon sumac
  • 2 cloves garlic, minced
  • 1 lemon, juiced
  • 1 tablespoon fresh mint, chopped
  • Flaky sea salt, to taste

Method

  1. In a bowl, combine zaatar, olive oil, salt, and black pepper. Mix well to create a marinade.
  2. Place chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage to coat the chicken evenly. Let marinate in the refrigerator for at least 15 minutes.
  3. Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-8 minutes per side or until fully cooked and the internal temperature reaches 165°F.
  4. While the chicken is grilling, prepare the sumac yogurt sauce. In a small bowl, combine Greek yogurt, sumac, minced garlic, lemon juice, and fresh mint. Stir well to combine.
  5. Once the chicken is cooked, remove from the grill and let rest for a few minutes. Slice and serve with a dollop of sumac yogurt sauce on the side, sprinkled with flaky sea salt to taste.
