Weekend Baked Beef Tacos

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground beef
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup tomato paste
  • 12 small corn tortillas
  • 1 cup shredded cheddar cheese
  • Flaky sea salt, to taste
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Method

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
  3. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 8-10 minutes.
  4. Stir in the ground cumin, paprika, salt, pepper, and tomato paste. Cook for an additional 2 minutes, mixing well until combined.
  5. Wrap the corn tortillas in aluminum foil and warm them in the oven for about 5 minutes to make them pliable.
  6. Spoon a portion of the beef mixture onto each tortilla, sprinkle with cheddar cheese, and fold them in half.
  7. Arrange the filled tortillas in a baking dish. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and the tortillas are slightly crisp.
  8. Remove from the oven, sprinkle with flaky sea salt, and garnish with fresh cilantro. Serve with lime wedges on the side.
