Vegetarian Hearty Stew
Warm up with this delicious and hearty vegetarian stew, perfect for chilly winter evenings. Packed with a variety of vegetables, it's both healthy and satisfying for the whole family.
Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 potatoes, peeled and diced
- 1 sweet potato, peeled and diced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 6 cups vegetable stock
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 1/4 cup fresh parsley, chopped
Method
- Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 5 minutes.
- Add the garlic, carrots, and celery. Cook for another 5 minutes, stirring occasionally.
- Stir in potatoes, sweet potato, bell pepper, and zucchini. Cook for 5 minutes, allowing the vegetables to begin softening.
- Add green beans, vegetable stock, diced tomatoes, and tomato paste. Stir well to combine.
- Bring to a boil, then reduce heat to low and simmer uncovered for 45 minutes, or until vegetables are tender.
- Stir in dried thyme and oregano. Season with salt and pepper to taste.
- Remove from heat and stir in fresh parsley just before serving. Taste and adjust seasoning if necessary.
