Vegetarian Hearty Stew

Warm up with this delicious and hearty vegetarian stew, perfect for chilly winter evenings. Packed with a variety of vegetables, it's both healthy and satisfying for the whole family.

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 2 potatoes, peeled and diced
  • 1 sweet potato, peeled and diced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 6 cups vegetable stock
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped

Method

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 5 minutes.
  2. Add the garlic, carrots, and celery. Cook for another 5 minutes, stirring occasionally.
  3. Stir in potatoes, sweet potato, bell pepper, and zucchini. Cook for 5 minutes, allowing the vegetables to begin softening.
  4. Add green beans, vegetable stock, diced tomatoes, and tomato paste. Stir well to combine.
  5. Bring to a boil, then reduce heat to low and simmer uncovered for 45 minutes, or until vegetables are tender.
  6. Stir in dried thyme and oregano. Season with salt and pepper to taste.
  7. Remove from heat and stir in fresh parsley just before serving. Taste and adjust seasoning if necessary.
