Vegetarian BBQ Baby Back 'Ribs'

Ingredients

  • 2 cups vital wheat gluten
  • 1/4 cup nutritional yeast
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 cup vegetable broth
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 1/2 cups barbecue sauce

Method

  1. Preheat your oven to 350°F (175°C). Grease a baking sheet or line it with parchment paper.
  2. In a large bowl, combine the vital wheat gluten, nutritional yeast, smoked paprika, garlic powder, onion powder, and black pepper.
  3. In a separate bowl, mix the vegetable broth, soy sauce, and olive oil.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. Knead the dough for about 3 minutes until it becomes elastic.
  5. Shape the dough into a rectangle approximately 1 inch thick. Cut into strips to resemble ribs.
  6. Place the strips on the prepared baking sheet and bake for 45 minutes.
  7. Remove the 'ribs' from the oven and brush both sides generously with barbecue sauce.
  8. Return to the oven and bake for another 30 minutes, basting with more barbecue sauce halfway through.
  9. Let the 'ribs' cool slightly before serving. Enjoy with additional barbecue sauce on the side.
