Vegan Sausage and Peppers Skillet

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, sliced
  • 2 bell peppers, sliced (any color)
  • 2 cloves garlic, minced
  • 1 package vegan sausage, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 can (14.5 oz) diced tomatoes, drained
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Method

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced onion and bell peppers to the skillet. Sauté for about 5 minutes until they begin to soften.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the sliced vegan sausage to the skillet. Cook for about 5 minutes, stirring occasionally, until browned.
  5. Sprinkle in the dried oregano and basil. Stir to combine and cook for 1 minute.
  6. Pour in the diced tomatoes and stir well. Let the mixture simmer for 10 minutes, allowing the flavors to meld together.
  7. Season with salt and pepper to taste.
