Vegan Sausage and Peppers Skillet

Ingredients
- 2 tablespoons olive oil
- 1 large yellow onion, sliced
- 2 bell peppers, sliced (any color)
- 2 cloves garlic, minced
- 1 package vegan sausage, sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 can (14.5 oz) diced tomatoes, drained
- Salt and pepper, to taste
- Fresh parsley, for garnish
Method
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced onion and bell peppers to the skillet. Sauté for about 5 minutes until they begin to soften.
- Stir in the minced garlic and cook for an additional 1 minute until fragrant.
- Add the sliced vegan sausage to the skillet. Cook for about 5 minutes, stirring occasionally, until browned.
- Sprinkle in the dried oregano and basil. Stir to combine and cook for 1 minute.
- Pour in the diced tomatoes and stir well. Let the mixture simmer for 10 minutes, allowing the flavors to meld together.
