Vegan Barbecue Jackfruit Ribs

These delicious vegan barbecue jackfruit ribs offer all the smoky flavors you love without the meat. Perfect for a healthy one-pan dinner any time of the year.

Ingredients

  • 2 cans young jackfruit in brine, drained and rinsed
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 1/2 cups barbecue sauce, divided
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon apple cider vinegar

Method

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, smoked paprika, ground cumin, black pepper, and salt. Stir to combine and cook for an additional 2 minutes.
  4. Add the drained jackfruit to the skillet and cook for 10 minutes, stirring occasionally, until it begins to brown slightly.
  5. Using a fork, shred the jackfruit into pieces resembling pulled pork.
  6. Pour 1 cup of barbecue sauce and the apple cider vinegar into the skillet. Mix well and cook for another 5 minutes to allow the flavors to meld.
  7. Transfer the jackfruit mixture onto the prepared baking sheet, spreading it out evenly.
  8. Brush the remaining 1/2 cup of barbecue sauce over the jackfruit to coat well.
  9. Bake in the preheated oven for 30 minutes, or until the edges are slightly crispy and caramelized.
  10. Remove from the oven and let it cool slightly before serving. Serve warm with your favorite sides.
