Vanilla Cupcakes with Buttercream

Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter, softened, for buttercream
- 3 to 4 cups powdered sugar, for buttercream
- 2 teaspoons vanilla extract, for buttercream
- 2 to 4 tablespoons milk, for buttercream
Method
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Alternate adding the flour mixture and milk to the butter mixture, beginning and ending with flour. Mix until just combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely on a wire rack.
- For the buttercream, beat the softened butter until creamy. Gradually add powdered sugar, vanilla, and milk, beating until smooth and spreadable.
- Once cupcakes are cool, frost them with the buttercream using a piping bag or spatula.
