Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 4 slices turkey bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons chopped fresh chives
  • Flaky sea salt, to taste

Method

  1. Preheat the oven to 400°F (200°C). Scrub the potatoes clean and dry them thoroughly.
  2. Pierce each potato several times with a fork. Rub with olive oil and sprinkle with kosher salt and black pepper.
  3. Place the potatoes directly on the oven rack and bake for 45-60 minutes, until tender.
  4. Meanwhile, cook the turkey bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate and crumble when cooled.
  5. Once potatoes are done, remove from the oven and carefully make a slit on the top of each one.
  6. Gently press the ends toward the center to open the potatoes. Fluff the insides with a fork.
  7. Load each potato with cheese, Greek yogurt, bacon crumbles, and chives. Sprinkle with flaky sea salt to taste.
  8. Return to the oven for 5-10 minutes until the cheese is melted. Serve immediately.
