Ultimate Loaded Baked Potato

Ingredients
- 4 large russet potatoes
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 4 slices turkey bacon
- 1 cup shredded cheddar cheese
- 1/2 cup plain Greek yogurt
- 2 tablespoons chopped fresh chives
- Flaky sea salt, to taste
Method
- Preheat the oven to 400°F (200°C). Scrub the potatoes clean and dry them thoroughly.
- Pierce each potato several times with a fork. Rub with olive oil and sprinkle with kosher salt and black pepper.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, until tender.
- Meanwhile, cook the turkey bacon in a skillet over medium heat until crispy. Transfer to a paper towel-lined plate and crumble when cooled.
- Once potatoes are done, remove from the oven and carefully make a slit on the top of each one.
- Gently press the ends toward the center to open the potatoes. Fluff the insides with a fork.
- Load each potato with cheese, Greek yogurt, bacon crumbles, and chives. Sprinkle with flaky sea salt to taste.
- Return to the oven for 5-10 minutes until the cheese is melted. Serve immediately.
