Thai Chicken and Rice Bowl

Ingredients
- 1 1/2 pounds boneless chicken thighs, cut into 1 inch pieces
- 1 cup jasmine rice
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1 cup mixed bell peppers, sliced
- 2 tablespoons fresh lime juice
- 1/4 cup fresh cilantro, chopped
Method
- Cook the jasmine rice according to package instructions. Set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the chicken pieces to the skillet and cook until they are no longer pink in the center, about 7-8 minutes.
- Stir in the soy sauce, fish sauce, and lime juice. Add the sliced bell peppers and cook for another 3-4 minutes until the peppers are tender-crisp.
- Serve the chicken mixture over the cooked jasmine rice. Garnish with chopped fresh cilantro before serving.
