Summer Indian Vegetable and Paneer Stew

Ingredients
- 2 tablespoons olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon cumin seeds
- 2 teaspoons garam masala
- 3 medium tomatoes, chopped
- 1 cup water
- 2 cups mixed summer vegetables, such as zucchini and bell peppers, chopped
- 200 g paneer, cubed
- Salt, to taste
- Cilantro, for garnish
Method
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, grated ginger, and cumin seeds. Cook for another 2 minutes until fragrant.
- Add the garam masala and chopped tomatoes to the pan. Cook for 5 minutes, allowing the tomatoes to soften.
- Pour in the water and bring the mixture to a simmer.
- Add the mixed summer vegetables, cover the pan, and let them simmer for 15 minutes, or until tender.
- Gently stir in the paneer cubes and season with salt. Cover and cook for an additional 10 minutes.
- Garnish with cilantro before serving.
