Summer Indian Vegetable and Paneer Stew

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin seeds
  • 2 teaspoons garam masala
  • 3 medium tomatoes, chopped
  • 1 cup water
  • 2 cups mixed summer vegetables, such as zucchini and bell peppers, chopped
  • 200 g paneer, cubed
  • Salt, to taste
  • Cilantro, for garnish

Method

  1. Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic, grated ginger, and cumin seeds. Cook for another 2 minutes until fragrant.
  3. Add the garam masala and chopped tomatoes to the pan. Cook for 5 minutes, allowing the tomatoes to soften.
  4. Pour in the water and bring the mixture to a simmer.
  5. Add the mixed summer vegetables, cover the pan, and let them simmer for 15 minutes, or until tender.
  6. Gently stir in the paneer cubes and season with salt. Cover and cook for an additional 10 minutes.
  7. Garnish with cilantro before serving.
