Summer Chinese Chicken and Ginger Broth

This light and fragrant Chinese chicken and ginger broth is ideal for summer days when you want something warm yet not too heavy. The subtle flavors of ginger and scallions enhance the broth, offering comfort while keeping it light. A touch of sesame oil adds a hint of indulgence.

Ingredients

  • 2 tablespoons vegetable oil
  • 2 boneless, skinless chicken breasts, sliced thinly
  • 1 tablespoon fresh ginger, sliced thinly
  • 1 liter chicken broth
  • 2 cups baby spinach leaves
  • 3 scallions, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. Heat the vegetable oil in a large pot over medium heat. Add the ginger slices and cook for about 1 minute until fragrant.
  2. Add the sliced chicken to the pot and cook until it turns white, around 3 to 4 minutes.
  3. Pour in the chicken broth and bring to a gentle simmer. Let it cook for about 10 minutes.
  4. Stir in the baby spinach, chopped scallions, and soy sauce. Cook for another 2 minutes until the spinach wilts.
  5. Remove from heat and stir in the sesame oil. Season with flaky sea salt and freshly ground black pepper to taste.
  6. Ladle the soup into bowls and serve immediately.
