Spring Pea and Mint Broth

Ingredients

  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 4 cups vegetable broth
  • 2 cups fresh peas (or frozen, if unavailable)
  • 1/4 cup fresh mint leaves, chopped
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. In a medium pot, melt the butter over medium heat.
  2. Add the chopped onion and cook for 3-4 minutes until softened and translucent.
  3. Stir in the minced garlic and cumin seeds, cooking for another minute until fragrant.
  4. Pour in the vegetable broth and bring to a gentle simmer.
  5. Add the peas and cook for 5-7 minutes until tender, especially if using fresh peas.
  6. Stir in the chopped mint leaves and season with flaky sea salt and black pepper to taste.
  7. Serve hot in bowls, garnished with additional fresh mint if desired.
