Spanish Summer Gazpacho

This gazpacho is a classic Spanish dish perfect for a hot summer day. It's refreshing, healthy, and requires no cooking. Using ripe tomatoes and high-quality olive oil makes all the difference in this simple recipe.

Ingredients

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoons good quality olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sea salt
  • Black pepper, to taste
  • 1/4 cup cold water
  • Fresh basil leaves, for garnish

Method

  1. In a blender, combine the chopped tomatoes, cucumber, red bell pepper, red onion, and garlic.
  2. Add olive oil, red wine vinegar, sea salt, and black pepper to the blender.
  3. Pour in the cold water and blend until the mixture is smooth and well combined.
  4. Taste and adjust seasoning with more salt or vinegar if desired.
  5. Chill the gazpacho in the refrigerator for at least 30 minutes before serving.
  6. Serve cold, garnished with fresh basil leaves.
