This Spanish-style gazpacho bowl brings the refreshing taste of summer to your table without any cooking involved. Combining ripe tomatoes, crisp cucumbers, and aromatic herbs, this dish offers a delightful balance of flavors. Ingredients

  • 4 ripe tomatoes, roughly chopped
  • 1 cucumber, peeled and diced
  • 1 red bell pepper, seeded and chopped
  • 1 small red onion, finely chopped
  • 2 tablespoons sherry vinegar
  • 1/4 cup extra virgin olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon smoked paprika
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • Fresh basil leaves, for garnish

Method

  1. In a large bowl, combine the tomatoes, cucumber, red bell pepper, and red onion.
  2. Add the sherry vinegar, extra virgin olive oil, garlic, and smoked paprika to the bowl. Stir to combine.
  3. Season with flaky sea salt and black pepper to taste. Mix well.
  4. Divide the gazpacho among four bowls.
  5. Garnish with fresh basil leaves and a drizzle of olive oil before serving.
