Spanish Lemon Olive Oil Bars

Ingredients
- 1 cup all-purpose flour
- 3/4 cup granulated sugar
- 1/2 cup high-quality olive oil
- 2 large eggs
- 1/4 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Powdered sugar, for dusting
Method
- Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan or line it with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- In a separate bowl, beat the eggs and add the olive oil, lemon juice, and lemon zest. Mix until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the bars to cool completely in the pan on a wire rack.
- Once cooled, dust with powdered sugar, slice into bars, and serve.
