Soft Snickerdoodle Pie
This soft snickerdoodle pie combines the beloved flavors of snickerdoodle cookies with the texture of a pie. Perfect for a cozy winter dessert.
Ingredients
- 1 cup unsalted butter, softened
- 1 1/4 cups granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 3/4 cups all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons granulated sugar
- 1 tablespoon ground cinnamon
Method
- Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish and set aside.
- In a large bowl, cream together the softened butter and 1 1/4 cups sugar until light and fluffy.
- Add the eggs and vanilla extract to the butter mixture and beat until well combined.
- In another bowl, whisk together the flour, cream of tartar, baking soda, and salt.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Spread the dough evenly into the prepared pie dish.
- In a small bowl, mix the 3 tablespoons of sugar with the ground cinnamon. Sprinkle over the top of the dough.
- Bake for 25-30 minutes, or until the edges are lightly golden and the center is set. Allow to cool slightly before serving.
