These fudgy brownies are perfect for when you need a small batch of indulgent chocolate goodness. Quick to make and even quicker to disappear, these brownies are a crowd-pleaser.

Ingredients

  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/4 teaspoon salt

Method

  1. Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium saucepan, melt the unsalted butter over medium heat.
  3. Remove from heat and stir in granulated sugar and brown sugar until well combined.
  4. Add the eggs and vanilla extract, and mix until smooth and slightly thickened.
  5. Sift in the all-purpose flour, cocoa powder, and salt. Stir until just combined; do not over-mix.
  6. Pour the batter into the prepared pan and smooth the top with a spatula.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Cut into squares and serve.
