Small-Batch Chewy Oatmeal Cookies

These chewy oatmeal cookies are perfect for when you want just a few to satisfy your sweet tooth. They're quick to make and deliciously comforting.

Ingredients

  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Method

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Add the vanilla extract and egg to the creamed mixture and beat until well combined.
  4. In another bowl, mix together the all-purpose flour, rolled oats, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 12-14 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
