Slow-Cooked Pulled Pork
This slow-cooked pulled pork is tender and flavorful, perfect for a comforting autumn meal. Using simple pantry ingredients, it’s a budget-friendly choice for any gathering or weekday dinner.
Ingredients
- 3 pounds pork shoulder, trimmed of excess fat
- 2 tablespoons olive oil
- 1 large onion, sliced
- 4 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoons apple cider vinegar
- 2 tablespoons tomato paste
- 1 tablespoon dried oregano
- 1 tablespoon smoked paprika
- 1 teaspoon ground cumin
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
Method
- Preheat your slow cooker on low setting. Season the pork shoulder with sea salt and black pepper on all sides.
- In a large skillet, heat olive oil over medium-high heat. Sear the pork on all sides until browned, about 3-4 minutes per side. Transfer the pork to the slow cooker.
- In the same skillet, add the sliced onion and minced garlic. Sauté until the onion is softened, about 5 minutes.
- Add the chicken broth, apple cider vinegar, tomato paste, dried oregano, smoked paprika, and ground cumin to the skillet. Stir to combine, then pour the mixture over the pork in the slow cooker.
- Cover the slow cooker and cook on low for 8 hours, or until the pork is very tender and easy to shred with a fork.
- Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the slow cooker and mix it with the juices.
- Adjust seasoning with additional salt and pepper if needed. Serve the pulled pork hot, with your choice of sides or in sandwiches.
