Slow-Cooked Hearty Beef Stew

Ingredients
- 2 tablespoons olive oil
- 2 pounds beef chuck, cut into 1-inch cubes
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
- 1 large onion, chopped
- 2 cloves garlic, minced
- 3 large carrots, sliced
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 3 medium potatoes, peeled and diced
- 2 teaspoons dried thyme
- 1 bay leaf
- 1 cup frozen peas
Method
- Heat the olive oil in a large pot over medium-high heat. Season the beef chuck with salt and pepper.
- Brown the beef in batches, ensuring each piece is well-seared. Remove the beef and set aside.
- In the same pot, add the onion and garlic. Sauté until the onion is translucent, about 5 minutes.
- Add the carrots and continue to sauté for another 2 minutes.
- Stir in the beef broth, tomato paste, Worcestershire sauce, potatoes, thyme, and bay leaf. Bring to a simmer.
- Return the beef to the pot, ensuring it's covered with liquid. Cover with a lid and reduce the heat to low.
- Let the stew simmer on low heat for about 3 to 3 1/2 hours, or until the beef is tender.
- In the last 10 minutes of cooking, add the frozen peas and stir well.
- Remove the bay leaf, adjust seasoning if necessary, and serve hot.
