Simple Small-Batch Cheesecake

Ingredients
- 1/2 cup graham cracker crumbs
- 2 tablespoons unsalted butter, melted
- 6 ounces cream cheese, softened
- 1/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- Pinch of salt
Method
- Preheat your oven to 325°F (160°C). Lightly grease two ramekins or small oven-safe dishes.
- In a small bowl, mix the graham cracker crumbs and melted butter until combined. Press the mixture evenly into the bottom of the prepared ramekins.
- In a medium bowl, beat the softened cream cheese and sugar together until smooth and creamy.
- Add in the egg, vanilla extract, and a pinch of salt, and mix until fully incorporated.
- Pour the cream cheese mixture evenly over the crusts in the ramekins.
- Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center slightly jiggles.
- Allow the cheesecakes to cool at room temperature, then refrigerate for at least 1 hour before serving.
