Simple Savory Fried Rice

Fried rice is a versatile dish that's perfect for using up leftover ingredients. This recipe focuses on creating a simple yet delicious version that will become a household favorite.

Ingredients

  • 3 cups cooked white rice, chilled
  • 2 tablespoons vegetable oil
  • 3 large eggs, beaten
  • 1 cup frozen peas and carrots, thawed
  • 4 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon white pepper
  • Salt, to taste

Method

  1. Heat 1 tablespoon of the vegetable oil in a large non-stick skillet over medium-high heat.
  2. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Add the thawed peas and carrots and cook for about 2 minutes until tender.
  4. Add the cooked rice to the skillet, breaking up any clumps with the back of a spoon. Stir-fry for about 5 minutes until the rice is heated through.
  5. Return the scrambled eggs to the skillet and stir to combine with the rice and vegetables.
  6. Add the sliced green onions, soy sauce, sesame oil, and white pepper. Stir well to combine all the ingredients.
  7. Taste and adjust seasoning with salt if needed. Serve hot.
