Simple Grilled Chicken with Spring Vegetables

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 bunch asparagus, trimmed
- 2 red bell peppers, sliced
- Flaky sea salt, to taste
- Ground black pepper, to taste
Method
- Preheat your grill to medium-high heat.
- In a small bowl, mix together the olive oil, dried thyme, and garlic powder. Season the chicken breasts with the mixture, ensuring they are evenly coated.
- Season the asparagus and red bell peppers with a little olive oil, salt, and pepper.
- Place the chicken breasts on the grill and cook for about 6-7 minutes on each side, or until fully cooked through and the internal temperature reaches 165°F (75°C).
- While the chicken is grilling, add the asparagus and bell peppers to the grill. Cook for about 5-7 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove the chicken and vegetables from the grill. Let the chicken rest for a couple of minutes before serving. Slice the chicken and serve with the grilled vegetables.
