Simple Beef Stew

This beef stew is a comforting dish perfect for a spring dinner. It's packed with tender beef and vegetables, making it a satisfying and nutritious meal.

Ingredients

  • 2 tablespoons olive oil
  • 1 1/2 pounds beef chuck, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 3 carrots, sliced
  • 3 potatoes, peeled and diced
  • 2 stalks celery, sliced
  • 1 bay leaf
  • 1 teaspoon dried thyme

Method

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season the beef with salt and pepper, then add it to the pot. Brown the beef on all sides, about 5 minutes.
  3. Add garlic and onion to the pot. Cook until the onion is translucent, about 3 minutes.
  4. Stir in the beef broth and tomato paste. Bring to a simmer.
  5. Add carrots, potatoes, celery, bay leaf, and thyme. Stir to combine.
  6. Reduce the heat to low, cover, and simmer for 2 hours, or until the beef and vegetables are tender.
  7. Remove bay leaf before serving. Adjust seasoning with salt and pepper if needed.
