This simple apple pie is perfect for cozy winter nights. With its buttery crust and spiced apple filling, it's a dessert everyone loves. Enjoy it warm with a scoop of vanilla ice cream!

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 6 medium apples, peeled, cored, and sliced
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 large egg, beaten

Method

  1. In a large bowl, combine the flour and butter. Use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, mixing until the dough comes together. Divide the dough into two discs, wrap in plastic, and refrigerate for 30 minutes.
  3. Preheat your oven to 425°F (220°C). In a large bowl, toss the apple slices with sugar, cinnamon, nutmeg, and lemon juice.
  4. Roll out one dough disc on a floured surface to fit a 9-inch pie pan. Place the rolled dough in the pan and trim the edges.
  5. Fill the crust with the apple mixture, then roll out the second dough disc and place it over the filling. Trim and seal the edges, and cut slits in the top to allow steam to escape.
  6. Brush the top crust with beaten egg, then place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Allow the pie to cool for at least 30 minutes before slicing and serving.
