Sheet-Pan Salmon with Summer Vegetables

This sheet-pan salmon is perfect for a slow summer weekend. Fresh vegetables and a simple marinade make it a delicious and healthy choice.

Ingredients

  • 4 salmon fillets, about 6 ounces each
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound asparagus, trimmed
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 tablespoon fresh dill, chopped

Method

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper.
  3. Place the salmon fillets on a lined sheet pan and brush them with the olive oil mixture.
  4. Arrange the asparagus, red bell pepper, and zucchini around the salmon on the sheet pan.
  5. Drizzle the remaining olive oil mixture over the vegetables.
  6. Roast in the preheated oven for about 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
  7. Sprinkle the chopped dill over the salmon and vegetables before serving.
