Sheet-Pan Salmon with Spring Vegetables

This sheet-pan salmon dinner is simple and flavorful, perfect for welcoming the spring season. With minimal cleanup, it's a great choice for a healthy weeknight meal.

Ingredients

  • 1 1/2 pounds salmon fillet, skin on
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried dill
  • 1 pound asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • 1 red onion, sliced
  • Flaky sea salt, to taste
  • Black pepper, to taste

Method

  1. Preheat the oven to 400°F (200°C). Line a sheet pan with parchment paper.
  2. Place the salmon fillet in the center of the sheet pan. Drizzle with olive oil and lemon juice, then sprinkle with minced garlic, dried dill, flaky sea salt, and black pepper.
  3. Arrange asparagus, cherry tomatoes, and red onion slices around the salmon on the sheet pan. Drizzle the vegetables with a little olive oil and season with salt and pepper.
  4. Bake in the preheated oven for 18-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
  5. Remove from the oven and let rest for a few minutes before serving. Serve warm with the roasted vegetables.
