Sheet-Pan Homestyle Meatloaf
This homestyle meatloaf is cooked on a sheet pan, making cleanup a breeze. It's a comforting meal perfect for any day of the week.
Ingredients
- 1 1/2 pounds ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 tablespoon ketchup
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 medium carrots, cut into 1-inch slices
- 4 medium potatoes, cut into wedges
- 2 tablespoons olive oil
- 1/2 teaspoon dried thyme
- 1/2 cup ketchup, for topping
Method
- Preheat the oven to 375°F (190°C) and line a large sheet pan with parchment paper.
- In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, ketchup, salt, and pepper. Mix until just combined.
- Shape the meat mixture into a loaf and place it in the center of the prepared sheet pan.
- In a separate bowl, toss the carrots and potatoes with olive oil, thyme, salt, and pepper. Arrange them evenly around the meatloaf on the sheet pan.
- Bake for 40 minutes. Remove from the oven, spread the ketchup over the top of the meatloaf, and return to the oven.
- Continue baking for an additional 20-30 minutes, or until the internal temperature of the meatloaf reaches 160°F (71°C) and the vegetables are tender.
- Let the meatloaf rest for 10 minutes before slicing. Serve with the roasted vegetables.
