Sheet-Pan Burgers with Vegetables

Enjoy a juicy, flavorful burger cooked alongside a medley of vegetables. This one-pan method makes for easy cleanup, leaving you more time to relax after dinner.

Ingredients

  • 1 pound ground beef, preferably 80% lean
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large red onion, sliced into rings
  • 1 red bell pepper, sliced into strips
  • 1 zucchini, sliced into rounds
  • 4 hamburger buns
  • 4 slices cheese of choice
  • Lettuce leaves, for serving
  • Tomato slices, for serving
  • Condiments of choice, for serving

Method

  1. Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. In a bowl, combine the ground beef, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until just combined. Form into 4 patties and place on one side of the sheet pan.
  3. On the other side of the sheet pan, spread out the red onion rings, bell pepper strips, and zucchini rounds. Drizzle with olive oil and season with salt and pepper. Toss gently to coat.
  4. Place the sheet pan in the oven and bake for 20 minutes. Remove from the oven, flip the patties, and give the vegetables a stir.
  5. Place a slice of cheese on each burger patty and return the pan to the oven. Bake for an additional 5 minutes, or until the cheese is melted and the vegetables are tender.
  6. Toast the hamburger buns in the oven for the last 2 minutes of cooking.
  7. Assemble the burgers by placing a patty on each bun, followed by lettuce, tomato slices, and the roasted vegetables. Add condiments as desired and serve immediately.
