Ingredients

  • 2 tablespoons unsalted butter, plus more for greasing
  • 1/4 cup cornstarch
  • 1 cup whole milk
  • 4 ounces goat cheese, crumbled
  • 3 large eggs, separated
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh chives, chopped
  • 1 tablespoon fresh thyme, chopped
  • Olive oil, for drizzling

Method

  1. Preheat the oven to 375°F (190°C). Grease four 6-ounce ramekins with butter and set aside.
  2. In a saucepan, melt the 2 tablespoons of butter over medium heat. Add the cornstarch, whisking constantly for 1 minute.
  3. Gradually whisk in the milk. Cook, whisking frequently, until the mixture thickens, about 3 minutes.
  4. Remove the saucepan from the heat. Stir in the goat cheese until melted and smooth. Let it cool for 5 minutes.
  5. In a bowl, mix the egg yolks into the cheese mixture. Season with salt, pepper, chives, and thyme.
  6. In another bowl, beat the egg whites until stiff peaks form. Gently fold them into the cheese mixture without deflating the whites.
  7. Divide the mixture evenly among the prepared ramekins. Place them on a baking sheet.
  8. Bake until the soufflés have risen and are golden brown, about 20 to 25 minutes. Serve immediately with a drizzle of olive oil.
