Savory Fried Rice with Vegetables
This savory fried rice is a perfect meal for any spring evening. Made with fresh vegetables and simple seasonings, it's both nutritious and satisfying. A great way to use leftover rice, this dish comes together quickly and is sure to please the whole family.
Ingredients
- 2 tablespoons vegetable oil
- 3 large eggs, beaten
- 1 cup diced carrots
- 1 cup frozen peas, thawed
- 4 cups cooked rice, preferably cold
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 4 green onions, sliced
- Salt, to taste
- Black pepper, to taste
Method
- Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
- Add the beaten eggs and scramble until fully cooked. Remove the eggs from the pan and set aside.
- In the same skillet, add the remaining 1 tablespoon of vegetable oil.
- Add the diced carrots and cook for about 3-4 minutes until they start to soften.
- Add the peas and cook for another 2 minutes, stirring occasionally.
- Increase the heat to high and add the cooked rice, breaking up any clumps with a spatula.
- Pour the soy sauce and sesame oil over the rice and vegetables, stirring to combine everything well.
- Add the scrambled eggs back to the skillet and mix into the rice.
- Stir in the sliced green onions and season with salt and black pepper to taste.
- Serve hot, garnished with additional green onions if desired.
