Savory Fried Rice with Vegetables

This savory fried rice is a perfect meal for any spring evening. Made with fresh vegetables and simple seasonings, it's both nutritious and satisfying. A great way to use leftover rice, this dish comes together quickly and is sure to please the whole family.

Ingredients

  • 2 tablespoons vegetable oil
  • 3 large eggs, beaten
  • 1 cup diced carrots
  • 1 cup frozen peas, thawed
  • 4 cups cooked rice, preferably cold
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 4 green onions, sliced
  • Salt, to taste
  • Black pepper, to taste

Method

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium heat.
  2. Add the beaten eggs and scramble until fully cooked. Remove the eggs from the pan and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of vegetable oil.
  4. Add the diced carrots and cook for about 3-4 minutes until they start to soften.
  5. Add the peas and cook for another 2 minutes, stirring occasionally.
  6. Increase the heat to high and add the cooked rice, breaking up any clumps with a spatula.
  7. Pour the soy sauce and sesame oil over the rice and vegetables, stirring to combine everything well.
  8. Add the scrambled eggs back to the skillet and mix into the rice.
  9. Stir in the sliced green onions and season with salt and black pepper to taste.
  10. Serve hot, garnished with additional green onions if desired.
