Ingredients

  • 3 cups cooked jasmine rice, chilled
  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup frozen peas, thawed
  • 3 large eggs, beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • 2 green onions, sliced

Method

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the diced onion and garlic, and sauté until the onion is translucent, about 3 minutes.
  2. Add the diced carrots and cook, stirring occasionally, until they begin to soften, about 5 minutes.
  3. Push the vegetables to one side of the skillet. Add the remaining tablespoon of oil to the empty side and pour in the beaten eggs. Scramble the eggs until just set, then combine with the vegetables.
  4. Increase the heat to high and add the chilled rice to the skillet. Stir well to combine and heat through.
  5. Add the thawed peas, soy sauce, and sesame oil. Stir everything together, ensuring the rice is evenly coated.
  6. Season the fried rice with flaky sea salt and freshly ground black pepper to taste. Stir in the sliced green onions just before serving.
