Savory Fried Cauliflower Rice

Ingredients
- 4 cups cauliflower florets, chopped into rice-sized pieces
- 3 tablespoons olive oil, divided
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup broccoli florets, chopped
- 2 large eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1/2 teaspoon ground black pepper
- 2 green onions, sliced
- Flaky sea salt, to taste
Method
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the onion and garlic, sautéing until fragrant and softened, about 3 minutes.
- Add the red bell pepper and broccoli florets to the skillet, cooking until they start to become tender, about 4 minutes.
- Push the vegetables to the side of the skillet and add the remaining olive oil. Pour the eggs into the empty space and scramble until fully cooked.
- Mix the scrambled eggs with the vegetables. Add the cauliflower rice to the skillet, stirring to combine everything.
- Pour in the soy sauce, sesame oil, and ground black pepper. Stir-fry everything together until the cauliflower rice is tender, about 5-7 minutes.
- Adjust seasoning with flaky sea salt to taste. Garnish with sliced green onions before serving.
