Quick Vegetable Stir-Fry
This quick vegetable stir-fry is a simple, healthy meal perfect for any night of the week. Using just one pan, it comes together in under 30 minutes and is packed full of flavor.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 large zucchini, sliced
- 1 cup broccoli florets
- 1 cup snap peas
- 3 tablespoons soy sauce
- 1 tablespoon fresh ginger, grated
- Flaky sea salt, to taste
- Black pepper, to taste
- Cooked rice, for serving
Method
- Heat the olive oil in a large skillet over medium-high heat.
- Add the sliced onion and minced garlic. Sauté until the onion is soft and translucent, about 3 minutes.
- Add the sliced red bell pepper and zucchini to the skillet. Cook for 4-5 minutes, stirring occasionally, until the vegetables are just tender.
- Add the broccoli florets and snap peas. Stir in the soy sauce and grated ginger. Cook for another 3-4 minutes, until all the vegetables are tender-crisp.
- Season with flaky sea salt and black pepper to taste. Stir well to combine.
- Serve the stir-fry over cooked rice and enjoy hot.
