Quick Vegetable Stir-Fry

This quick vegetable stir-fry is a simple, healthy meal perfect for any night of the week. Using just one pan, it comes together in under 30 minutes and is packed full of flavor.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 large zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 tablespoons soy sauce
  • 1 tablespoon fresh ginger, grated
  • Flaky sea salt, to taste
  • Black pepper, to taste
  • Cooked rice, for serving

Method

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced onion and minced garlic. Sauté until the onion is soft and translucent, about 3 minutes.
  3. Add the sliced red bell pepper and zucchini to the skillet. Cook for 4-5 minutes, stirring occasionally, until the vegetables are just tender.
  4. Add the broccoli florets and snap peas. Stir in the soy sauce and grated ginger. Cook for another 3-4 minutes, until all the vegetables are tender-crisp.
  5. Season with flaky sea salt and black pepper to taste. Stir well to combine.
  6. Serve the stir-fry over cooked rice and enjoy hot.
