One-Pan Hearty Beef Stew
This hearty beef stew is perfect for those who seek comfort in a bowl. Made all in one pan, it's both convenient and delicious, filling your home with a warm aroma.
Ingredients
- 2 tablespoons olive oil
- 2 pounds beef chuck, cut into 1-inch cubes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 3 large carrots, sliced
- 3 medium potatoes, peeled and cubed
- 2 teaspoons dried thyme
- 1 cup frozen peas
- Fresh parsley, chopped, for garnish
Method
- Heat olive oil in a large oven-safe pan over medium-high heat.
- Season the beef with salt and black pepper, then sear in the pan until browned on all sides. Remove from the pan and set aside.
- In the same pan, add the chopped onion and sauté until translucent. Add the minced garlic and cook for another minute.
- Sprinkle the flour over the onions and garlic, stirring constantly to form a roux. Gradually add beef broth, stirring to prevent lumps.
- Stir in the tomato paste and Worcestershire sauce, then return the beef to the pan with any accumulated juices.
- Add the carrots, potatoes, and thyme. Bring to a simmer, cover, and transfer the pan to a preheated oven at 325°F (165°C).
- Cook in the oven for about 2 hours, or until the beef is tender and the vegetables are cooked through.
- In the last 10 minutes of cooking, add the frozen peas and return to the oven.
- Remove the stew from the oven, let it rest for 10 minutes, then garnish with chopped parsley before serving.
