Nordic Spring Salad with Smoked Trout and New Potatoes

This Nordic spring salad brings together the freshness of spring greens with the smoky depth of trout and the earthiness of new potatoes. It's a no-cook dish that celebrates the best of the season with minimal effort, perfect for a healthy and satisfying meal.

Ingredients

  • 200 g smoked trout, flaked
  • 250 g baby new potatoes, pre-cooked and sliced
  • 100 g mixed spring greens
  • 1/4 cup radishes, thinly sliced
  • 1 small cucumber, sliced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons crème fraîche
  • 1 tablespoon lemon juice
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste
  • Olive oil, for drizzling

Method

  1. In a large salad bowl, combine the flaked smoked trout, sliced pre-cooked baby new potatoes, and mixed spring greens.
  2. Add the sliced radishes, cucumber, and fresh dill to the bowl.
  3. In a small bowl, mix the crème fraîche with the lemon juice, and season with flaky sea salt and freshly ground black pepper to taste.
  4. Pour the crème fraîche dressing over the salad, gently tossing to combine the ingredients evenly.
  5. Drizzle with a little olive oil, if desired, and serve immediately.
