Nordic Berry Crumble

Ingredients
- 3 cups mixed berries, fresh or frozen
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 cup light brown sugar
- 1/4 teaspoon ground cinnamon
- 1/2 cup unsalted butter, cold and cubed
- Flaky sea salt, to taste
Method
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the mixed berries, granulated sugar, cornstarch, and vanilla extract. Toss to coat the berries evenly.
- Pour the berry mixture into a baking dish, spreading it out evenly.
- In another bowl, mix the all-purpose flour, rolled oats, light brown sugar, and ground cinnamon. Add the cold, cubed butter and use your fingers to rub it into the dry ingredients until the mixture resembles coarse crumbs.
- Sprinkle the crumble mixture evenly over the berries in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the berry juices are bubbling.
- Remove from the oven and let it cool slightly. Serve warm, with a sprinkle of flaky sea salt to taste.
