Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsweetened shredded coconut, toasted
  • 1/2 cup sweetened condensed milk
  • 1/4 cup coconut oil, melted
  • 1/2 cup fresh lime juice
  • 2 teaspoons lime zest
  • 1/4 cup powdered sugar
  • Flaky sea salt, to taste

Method

  1. In a bowl, combine the graham cracker crumbs and toasted shredded coconut.
  2. Add the melted coconut oil to the bowl, mixing until the crumbs are evenly coated.
  3. Press the crumb mixture into the bottom of an 8x8-inch baking dish to form an even layer.
  4. In another bowl, whisk together sweetened condensed milk, fresh lime juice, lime zest, and powdered sugar.
  5. Pour the lime mixture over the crust, spreading evenly with a spatula.
  6. Chill in the refrigerator for at least 1 hour until set.
