Moroccan Spiced Chicken Skewers with Chermoula Sauce

These chicken skewers are marinated in a blend of Moroccan spices and grilled to perfection, offering a taste of North Africa in a small batch form. Ingredients

  • 1 pound boneless chicken breast, cut into 1 inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 cup extra virgin olive oil
  • Flaky sea salt, to taste

Method

  1. In a large bowl, combine the chicken cubes, olive oil, ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and black pepper. Toss until the chicken is thoroughly coated with the spices. Cover and marinate in the refrigerator for at least 30 minutes.
  2. Preheat a grill or grill pan over medium-high heat. Thread the marinated chicken onto skewers.
  3. Grill the chicken skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
  4. While the chicken is grilling, prepare the chermoula sauce. In a food processor, combine the cilantro, parsley, garlic, lemon juice, and extra virgin olive oil. Blend until smooth. Season with flaky sea salt to taste.
  5. Serve the hot chicken skewers with a generous drizzle of chermoula sauce. Enjoy immediately.
