These mini churro bites are a delightful treat that bring the fun of a traditional churro to a manageable, easy-to-make size. Perfectly crisped on the outside and soft on the inside, they are rolled in cinnamon sugar for a sweet finishing touch. Ingredients

  • 1 cup water
  • 2 tablespoons unsalted butter
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup granulated sugar, for coating
  • 1 teaspoon ground cinnamon
  • Vegetable oil, for frying

Method

  1. In a medium saucepan, combine water, butter, granulated sugar, and salt over medium heat. Bring to a boil.
  2. Reduce heat to low, add the flour, and stir vigorously with a wooden spoon until the mixture forms a ball, about 1 minute.
  3. Remove from heat and let cool for 5 minutes. Add the egg and vanilla extract, mixing until smooth and glossy.
  4. Heat about 2 inches of vegetable oil in a deep skillet over medium heat until it reaches 350°F.
  5. Transfer dough to a piping bag fitted with a star tip. Pipe 1-inch segments of dough into the hot oil, using scissors to cut the dough.
  6. Fry churro bites in batches, turning occasionally, until golden brown, about 2 to 3 minutes. Drain on paper towels.
  7. Mix 1/2 cup granulated sugar and ground cinnamon in a shallow dish. Roll the warm churro bites in the cinnamon sugar to coat.
