Middle Eastern Lemon Lentil Soup

Ingredients
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 cup red lentils, rinsed
- 6 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon ground turmeric
- 1 lemon, juice and zest
- Flaky sea salt, to taste
- Black pepper, to taste
- 1/4 cup fresh cilantro, chopped
Method
- In a large pot, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the rinsed red lentils, vegetable broth, ground cumin, and ground turmeric. Bring to a boil.
- Reduce the heat to low and let simmer for 20-25 minutes or until the lentils are tender.
- Stir in the juice and zest of the lemon. Season with flaky sea salt and black pepper to taste.
- Remove from heat and stir in the chopped fresh cilantro. Serve the soup hot with additional lemon wedges if desired.
