Mediterranean Chickpea Salad

This Mediterranean Chickpea Salad is a refreshing and satisfying option for a quick and healthy meal. Perfect for spring, it's packed with fresh vegetables and a hint of lemon.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Method

  1. In a large bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, Kalamata olives, and parsley.
  2. In a small bowl, whisk together the olive oil and lemon juice.
