Mediterranean Chickpea and Avocado Salad

This Mediterranean-inspired salad is a perfect option for those hot summer days when you want something refreshing yet substantial. Packed with protein-rich chickpeas, creamy avocado, and a burst of fresh herbs, it requires no cooking, making it ideal for a quick and healthy meal.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 ripe avocados, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup kalamata olives, pitted and sliced
  • 2 tablespoons lemon juice, freshly squeezed
  • 2 tablespoons extra virgin olive oil
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. In a large mixing bowl, combine the drained chickpeas, diced avocados, halved cherry tomatoes, chopped red onion, chopped parsley, and sliced kalamata olives.
  2. In a small bowl, whisk together the freshly squeezed lemon juice and extra virgin olive oil.
  3. Pour the lemon dressing over the salad ingredients and gently toss to combine.
  4. Season with flaky sea salt and freshly ground black pepper to taste.
