Ingredients

  • 1 cup sweet rice flour (mochiko)
  • 1/2 cup granulated sugar
  • 1 tablespoon matcha powder, high-quality
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 2 large eggs
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Method

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan and line the bottom with parchment paper.
  2. In a large bowl, whisk together the sweet rice flour, granulated sugar, matcha powder, baking powder, and salt until well combined.
  3. In a separate bowl, whisk together the whole milk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until the batter is smooth and well combined.
  5. Pour the batter into the prepared cake pan. Smooth the top with a spatula.
  6. Bake in the preheated oven for 40 minutes, or until the cake is set and a toothpick inserted in the center comes out clean.
