Mango Cardamom Phirni

Ingredients
- 1/4 cup basmati rice
- 3 cups whole milk
- 1/2 cup sugar
- 1/4 cup fresh mango puree
- 1/2 teaspoon ground cardamom
- 1 tablespoon sliced almonds
- Pinch of saffron strands
- Flaky sea salt, to taste
Method
- Rinse the basmati rice under cold water until the water runs clear. Drain and let it dry for a few minutes.
- Grind the dried rice into a coarse powder using a spice grinder or mortar and pestle.
- In a heavy-bottomed saucepan, bring the whole milk to a boil. Reduce the heat to low and add the ground rice, stirring continuously to avoid lumps.
- Add the sugar and continue cooking on low heat, stirring frequently, until the mixture thickens and the rice is cooked, about 20 minutes.
- Stir in the mango puree, ground cardamom, a pinch of saffron strands, and a pinch of flaky sea salt. Mix well and cook for another 5 minutes.
- Remove from heat and allow it to cool slightly. Pour into serving bowls and garnish with sliced almonds.
- Refrigerate for at least 30 minutes before serving to allow the flavors to meld and the phirni to set.
