Loaded Baked Potato Sheet Pan Dinner

This one-pan loaded baked potato meal brings the comfort of a classic loaded potato to your table with minimal cleanup. Perfect for year-round enjoyment, this recipe is hearty and satisfying.

Ingredients

  • 4 large russet potatoes, scrubbed clean
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 4 green onions, thinly sliced
  • 2 tablespoons chopped fresh parsley

Method

  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Prick the potatoes several times with a fork. Rub them with olive oil and sprinkle with salt and black pepper.
  3. Place the potatoes on the prepared sheet pan. Bake for 45 minutes to 1 hour, or until the potatoes are tender when pierced with a fork.
  4. Remove the potatoes from the oven and let them cool slightly. Cut a slit in the top of each potato and fluff the insides with a fork.
  5. Evenly distribute the shredded cheddar cheese, sour cream, crumbled bacon, green onions, and parsley over the potatoes.
  6. Return the sheet pan to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  7. Serve hot, garnished with extra parsley if desired.
