Ingredients

  • 2 tablespoons sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon gochujang
  • 2 cloves garlic, minced
  • 1 medium carrot, julienned
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half moons
  • 1 cup shiitake mushrooms, sliced
  • 2 green onions, sliced
  • Flaky sea salt, to taste

Method

  1. In a large pan over medium heat, add the sesame oil and let it warm up for about 1 minute.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Stir in the gochujang and soy sauce, mixing well to combine for another 30 seconds.
  4. Add the carrot, red bell pepper, zucchini, and shiitake mushrooms to the pan. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  5. Toss in the sliced green onions and season with flaky sea salt to taste. Stir everything together for 1 more minute.
  6. Remove from heat and serve immediately, garnished with additional green onions if desired.
