Hearty Vegetable Stew

Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 medium potatoes, diced
- 2 cups vegetable broth
- 1 can (15 ounces) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Flaky sea salt, to taste
- Freshly ground black pepper, to taste
- 1 cup green beans, trimmed and halved
Method
- Heat the olive oil in a large pot over medium heat. Add the onion and sauté for about 5 minutes until translucent.
- Add the garlic and cook for another minute until fragrant.
- Stir in the carrots and potatoes, cooking for another 5 minutes.
- Add the vegetable broth, diced tomatoes, thyme, and rosemary. Bring to a boil, then reduce the heat to a simmer.
- Cover and let simmer for about 45 minutes, stirring occasionally, until the vegetables are tender.
- Add the green beans and continue to simmer for another 10 minutes.
- Season with salt and pepper to taste before serving.
