Hearty Thai-Inspired Chicken Salad

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup Thai-style peanut dressing

Method

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season chicken strips with salt and black pepper.
  3. Cook chicken in the skillet for 5-7 minutes, or until cooked through and golden brown. Let cool slightly.
  4. In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, and cilantro.
  5. Add the cooked chicken strips to the salad.
  6. Drizzle with Thai-style peanut dressing and toss gently to combine.
  7. Serve immediately, dividing the salad among four plates.
