Hearty Sausage and Peppers Skillet

Ingredients

  • 2 tablespoons olive oil
  • 1 1/2 pounds Italian sausage links
  • 2 red bell peppers, sliced
  • 2 yellow bell peppers, sliced
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil leaves, for garnish

Method

  1. Heat the olive oil in a large skillet over medium heat. Add the sausage links and cook until browned on all sides, about 10 minutes. Remove the sausages and set aside.
  2. In the same skillet, add the sliced red and yellow bell peppers and onion. Cook until the vegetables are softened, stirring occasionally, about 8 minutes.
  3. Stir in the minced garlic, cooking for an additional 1 minute until fragrant.
  4. Return the sausages to the skillet, and pour in the chicken broth. Add the dried oregano and red pepper flakes. Stir to combine.
  5. Reduce the heat to low, cover the skillet, and let simmer for 45 minutes, stirring occasionally.
  6. Season with salt and black pepper to taste. Garnish with fresh basil leaves before serving.
