Hearty Sausage and Peppers Skillet

Ingredients
- 2 tablespoons olive oil
- 1 1/2 pounds Italian sausage links
- 2 red bell peppers, sliced
- 2 yellow bell peppers, sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1/2 cup low-sodium chicken broth
- 1 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- Salt, to taste
- Black pepper, to taste
- Fresh basil leaves, for garnish
Method
- Heat the olive oil in a large skillet over medium heat. Add the sausage links and cook until browned on all sides, about 10 minutes. Remove the sausages and set aside.
- In the same skillet, add the sliced red and yellow bell peppers and onion. Cook until the vegetables are softened, stirring occasionally, about 8 minutes.
- Stir in the minced garlic, cooking for an additional 1 minute until fragrant.
- Return the sausages to the skillet, and pour in the chicken broth. Add the dried oregano and red pepper flakes. Stir to combine.
- Reduce the heat to low, cover the skillet, and let simmer for 45 minutes, stirring occasionally.
- Season with salt and black pepper to taste. Garnish with fresh basil leaves before serving.
